Easter treats

Wanting something different to chocolate but just as indulgent, try my extra fruity but in no way average Eton mess.

Things you’ll need.

Ingredients

  • Double cream
  • Lemon mousse mix (lemon curd will do the trick too)
  • Passion fruit coolie
  • crème patissiere (you could use a normal custard also)
  • Meringue
  • White chocolate sauce
  • Fruit of your choice (I haven’t used any as I was re creating one I buy that has none in but I normally use raspberries, strawberries things like that if you wish to add fruit)
  • Optional; I used edible yellow glitter to sprinkle on top to make it extra special

Equipment

  • Electric whisk
  • Fancy glasses/ bowls
  • A bowl to whisk the cream
  • A smaller bowl to half

Now you have everything lets get started.

The first thing your going to want to do i whip your double cream and split it between 2 bowls.

In one half swirl lemon mouse mix or lemon curd into the whipped cream and leave the other half plain.

Once your cream is done you can start layering in your glasses or serving bowl. run the passion fruit syrup/coulis around your glass or bowl to coat the sides and bottom like so in the image above.

Its completely up to you how you layer your desert. I added some lightly crushed meringue first and the a spoon full or the lemon swirl cream along with more crushed meringue on top of that.

The next layer i added some creme patissiere or normal crusted that's up to you.

I also added some white chocolate fudge sauce in between some of the layers this is optional as to where to add the white chocolate sauce i also used this to drizzle on top at the end.

Depending on the size of your glasses or serving bowl repeat all steps as many time as you wish, for my last layer i added the plain cream with meringue in and half a meringue nest on top with yellow edible glitter and white chocolate sauce to decorate. TIP: If you have any meringue nests left and don't want to waste them add small amounts of left over ingredients to the centre and have as mini deserts. these are perfect for party's.
